I heat the milk, with a slice of onion, some peppercorns, and a bay leaf, to infuse the flavours. Then, I strain the heated milk before adding it to the flour & butter roux. As someone else noted, a few scrapings of fresh nutmeg goes nicely with this, or just a dash of hot sauce, or a very small amount of smooth Dijon mustard, depending on the dish that the sauce accompanies. In any case, I am subtle with those additional last flavourings because I want those to accent, and not over-power the sauce.
